As a Culinary Operations Manager, you will play a vital role in the daily functioning of our kitchen. Your responsibilities will include the following: • Assisting the head chef in the overall food service and kitchen operations. • Providing leadership and direction to kitchen staff, ensuring all tasks are executed effectively. • Monitoring kitchen processes to comply with health, safety, and fire department regulations. • Ensuring adherence to state, federal, and local food handling standards and requirements. • Helping implement and manage kitchen and restaurant policies during your shifts. • Stepping in as a line cook when necessary and performing all kitchen positions as needed. • Maintaining proper storage temperatures for all products and updating recipe books with current menu items, portions, and ingredients. • Utilizing daily prep sheets and yield sheets, and accurately recording product counts. • Participating in the monthly inventory process and proactively addressing inventory and staffing issues. • Monitoring labor costs to achieve budget goals while following restaurant policies. • Overseeing the training and development of kitchen staff. • Participating in the hiring process by conducting interviews and making hiring recommendations. • Assisting in the completion of 30-day and annual reviews for kitchen staff members.
