Job Title: Raw Bar Manager Department: Swinomish Shellfish Company Reports to: SDA Director of Retail Operations Summary: (this is a seasonal position) The Raw Bar Manager is responsible for the overall operation of the retail oyster concession sales, organizing, coordinating, and scheduling of team members. The Raw Bar Manager is also responsible for training all assigned team members in proper food preparation, kitchen safety techniques and health standards. In addition, the supervisor will maintain inventory control and quality of live oysters to ensure it meets the standards of excellence. The Raw Bar Manager will be required to assist the team in preparation and serving raw oysters to each guest in a friendly and efficient manner. The ideal candidate will have a positive, enthusiastic, committed and flexible attitude at all times, while promoting importance of effective teamwork. This position will be eligible to receive tip income from customers. Essential Duties and Responsibilities: • Train, coach, develop, and mentor team in the process of proper food handling, product knowledge, and all aspects of customer service • Establishes weekly work schedules and ensures proper staffing coverage • Inspects establishment and observe team members to ensure compliance with, health and safety standards and regulations • Ensures the highest standards of guest service and satisfaction, including dealing with guest complaints in a prompt and satisfactory manner • Continually monitors, evaluates, and disciplines assigned personnel as necessary according to established policies and procedures • Monitor inventory levels of oysters and other products, reporting any shortages or quality issues with Farm Manager • Collaborate with Farm Manager on pertinent information concerning live product, maintenance and personnel • Utilize the company’s point of sale system for retail transactions (including best practices for cash handling. • Complete required retail food and beverage trainings as required to serve menu items. • Communicate with vendors for inventory and ordering. • Planning for menu items as needed. • All assigned duties and responsibilities outlined in Raw Bar Attendant – Concession server: o Acknowledge, greet and engage guests upon entry o Carefully and skillfully shuck oysters with precision and efficiency o Ensure all oysters are cleaned and presented for service o Handle live products with care to preserve freshness and quality o Maintain cleanliness and organization of the oyster station and surrounding areas o Provide excellent customer service, informing customers about menu items, specials, answering questions, and accepting orders and payments o Ensure proper storage and inventory management of shellfish supplies o Verify age of customers if they are purchasing alcohol o Maintain a clean and sanitary work and service area including tables, shelves, walls, and equipment o Assist in the overall food preparation process as needed • Other duties, as assigned Education and Experience: • Must be at least 21 years of age • High School Diploma or GED preferred, or equivalent combination of education and experience • Five (5) years retail operations experience preferred, including POS systems and customer service • Must possess a Washington State Food Handler’s Permit within 30 days of hiring • Minimum two (2) year’s supervisory experience preferred • Previous oyster shucking experience or seafood preparation background preferred Required Knowledge, Skills and Abilities: • Use logic and reasoning to identify the strengths and weaknesses of alternative solutions, conclusions or approaches to problems • Identify measures or indicators of system performance and the actions needed to improve or correct performance, relative to the goals of the system • Knowledge of principles and processes for providing customer service • Basic mathematical ability; e.g., ability to make change • Patience, tact, and good problem-solving ability • Strong communication skills and the ability to work collaboratively within a team • Ability to stand for long periods of time • Ability to sustain long periods of repetitious movement • Ability to work efficiently in a fast-paced environment while maintaining attention to detail • Knowledge of food safety standards and sanitation practices • Commit to working a schedule built around retail operations, including weekends, holidays, and evenings • Must pass criminal background check and oral drug screen (exception of THC) Tribal preference in hiring shall apply to Swinomish Indian Tribal Community job opportunities Job Types: Full-time, Temporary, Seasonal Work Location: In person
