Job Title: Cook 3 Reports To: General Manager/Kitchen Manager / Head Chef / Operations Manager Position Type: Full-Time / Part-Time Job Summary: The Cook 3 position encompasses the duties of both Cook 1 and Cook 2, with added responsibilities. This role involves preparing a wide variety of food items according to recipes and portion control guidelines, setting up and breaking down the line, maintaining cleanliness, and adhering to health and safety standards. The Cook 3 is expected to lead other cooks, communicate effectively with the Expeditor, and ensure the quality of food exceeds guests' expectations. Key Responsibilities: * Food Preparation: Use pars from the daily production chart to prepare products. Bring necessary tools, plates, and food items to the line section and maintain these items throughout the shift. Follow standard portion control in assembling dishes. * Order Management: Mentally process orders from the Expeditor, POS, or KDS while assembling plates. Assemble plates efficiently during high-volume business periods. Communicate effectively with the Expeditor. * Sanitation and Cleanliness: Clean and maintain the hot box, steam table, stove, steam kettle, braising pan, and counter/work space. Adhere to health and sanitation standards. * Physical Requirements: Perform significant movement throughout the shift, including standing, walking, bending, stooping, turning, and lifting objects up to 50 pounds. All physical movements must be performed with speed and accuracy. * Team Collaboration: Work autonomously within specific job functions while interacting extensively with coworkers to accomplish tasks. Be a team player, especially during high-stress meal periods. Lead other cooks and run the entire cook line. * Health and Safety Compliance: Follow all company policies, health, safety, and sanitation standards. Understand and use cleaning chemicals appropriately. Personal Appearance: The Cook 3 position requires a professional appearance at all times. This includes wearing a clean and standard uniform each day/shift, maintaining personal hygiene, and adhering to all restaurant-specific appearance guidelines. Qualifications: * At least 2 years of experience as a prep or line cook in a high-volume, full-service brand name restaurant such as Chili’s, BJ’s, or Olive Garden. * Leadership abilities to lead other cooks and run the entire cook line. * Must be at least 18 years of age. * Understands and follows recipes, portion control, production charts, food loss report, smallware breakage chart, directions, chit sheets, POS, KDS, and/or handwritten food orders, other written and verbal directions of various formats. * Communicates effectively with Expeditor and line positions. * Punctual and dependable. * In some areas, a food handler's permit may be required. Additional Information: * Environmental Demands: During warm seasons, kitchen temperatures may reach 110º. The need to keep food at a minimum of 140º, coupled with extreme heat in some parts of the country, can cause this interior condition. * Chemical Use: The only chemicals involved in this job are of the cleaning variety. Training is provided for the appropriate use of these cleaning agents. * Stressful Environment: Meal periods during a shift may be very stressful and sometimes frustrating. Kitchen associates must be able to manage stress and maintain a high level of performance. Physical and Hour Requirements: * Ability to stand and walk 100% of the time during the scheduled shift. * Ability to lift up to 50 pounds. * Ability to be productive all hours of the scheduled shift and work in a fast-paced, sometimes stressful environment. * Ability to bend, stoop, and twist frequently during the shift. * Ability to work in hot, close quarters for extended periods.
