MANAGER OF COQUELICO AT THE PORTLAND ART MUSEUM Join us at Coquelico (CO-KLEE-CO), a European vibe bistro at the new Mark Rothko Pavilion at the Portland Art Museum, that is owned and operated by Providore Fine Foods. The Coquelico manager, first and foremost is a hospitality superstar. Somebody who understands what it takes to create and experience for guests and leads their team in doing so. This position oversees and manages all staff including kitchen lead, counter lead and general staff under the guidance of Providore ownership and Providore GM-Kitchen and GM-Retail. The bistro will feature counter service for ordering and then table service for delivery of food and bussing. The menu will focus on simple, but elevated bistro fare, amazing espresso drinks from our partner Spella Coffee and a wine/beer/spirit program. This position requires a strong eye for detail, design and quality and sees top-notch customer service as a fine art. In the less glamorous, but just as important, this role focuses on the oversite of the daily functions of the team and creating the systems that create a productive, enjoyable work environment and service that runs like clockwork. Though we are looking for a FOH pro, we expect a high level of culinary knowledge with some cooking skills, strong organizational and leadership skills, and the ability to dynamically lead a team. Additionally, experience with catering and events is a must, along with both coffee and wine knowledge. This is a leadership position with responsibility to open and close the business, and uphold the values and service standards expressed in the Providore handbook. WHAT YOU NEED • Minimum 5+ years of management experience in a restaurant, catering or retail environment • Experience with catering and events • Some: kitchen, barista and wine + spirits experience • Marketing savvy and social media experience • Exemplary people and leadership skills • An expert in creating an incredible guest experience - a real customer service pro • Extremely detail oriented with a critical design eye • A strong organizational mind and enthusiasm for developing clear and teachable systems • Excellent judgment and ability to help staff find productive solutions to issues both with guests + other staff • Great collaborator, creative thinker and problem solver • Excellent written and verbal communication skills • Current OLCC and Food Handler's Card • High-level proficiency with POS systems (Toast preferred), Microsoft Office Suite, Google platforms, business softwares, computers and technology in general. Ability to read P + L statements, create sales projections and goals, control labor and watch margins. Good math skills required. ROLES + RESPONSIBILITIES • Works closely with Providore ownership, GMs and Admin Manager • Works closely with Portland Art Museum sales + experience team in accordance to onsite catering and events • Oversees all aspects of the cafe with a highly detailed eye in accordance to food quality, customer experience, and presentation of the room • This role maintains and upholds the presentation standards set by ownership • Teaches and models exceptional customer service • Develops and works with organizational systems for opening and closing, daily productivity, and cleanliness and safety • Directs and trains staff on keeping the dining area (inside and out) quickly cleared and cleaned, tables set, and food delivered quickly • Keeps all retail displays and grab and go filled with product • Hires, trains + performance manages all staff • Creates and implements training programs under the guidance of the Providore GMs • Works special events and buy-outs and manages staff • Oversees cafe marketing efforts including social media in conjunction with Providore team • Upholds and trains all health and safety guidelines • Manages and orders all paper goods and other supplies • Accounts for and organizes all invoices and deliveries • Maintains positive relationships within the museum, especially with gift store staff • Organizes and maintains backstock and takes a leadership role in cafe inventories • Manages all troubleshooting with IT issues + POS, internet and other front-end hardware • Manages all price updates in POS • Supports underlying business goals such as gross margin, labor and sales targets PROVIDORE PRINCIPLES POSITIVE You bring a positive, can-do energy to the workplace and model that to all you work with and manage, and to the customers. This position is very active and requires standing, walking, bending, kneeling, stooping, crouching, crawling and climbing all day. The employee must frequently lift and move items that weigh more than 50 pounds. Employees must be willing to work near hot surfaces and equipment in a humid environment.
