Manage high-value social and corporate catering sales including prospecting, contract negotiation, event detailing, revenue forecasting, and team mentoring.
Requires 2-4+ years catering/group sales experience with expertise in consultative selling, complex contracts, banquet service, event technology platforms, and strong communication skills.
The Senior Catering Sales Manager owns high-value social and corporate catering revenue—from prospecting and proposals to contracts, detailing, and post-con. You’ll handle the largest/most complex programs (galas, multi-day meetings, weddings), grow key accounts, mentor junior sellers, and partner with Culinary/Banquets/Revenue to deliver profitable, on-brand events that drive rebooks. Key Responsibilities • Business Development & Key Accounts • Target high-yield segments (corporate meetings, conferences, galas, weddings, local off-site catering); build multi-event and multi-year agreements. • Maintain executive-level relationships with planners, DMCs, CVBs, and community partners; host FAMs and showcase events. • Sales Cycle Leadership • Qualify needs, design custom menus/packages, create proposals and presentations, and negotiate terms/riders to protect margin and mitigate risk. • Draft and secure contracts, deposits, credit approvals, guarantees, and addenda in compliance with policies. • Event Detailing & Handoffs • Produce accurate BEOs, diagrams, timelines, and resumes; confirm counts, dietary/allergy needs, ADA, and AV/production requirements. • Lead pre-cons and deliver clean handoffs to Banquets/Culinary/Operations; provide on-site presence for key programs. • Revenue Management & Forecasting • Align pricing/minimums, space optimization, and displacement decisions with Revenue; execute need-period actions and upsell strategies. • Own weekly forecasts, pace/pickup, and production reports; analyze post-event profitability and mix. • Program Quality & Brand • Ensure presentation standards and service sequences are met; capture feedback and drive continuous improvement with partners. • Collaborate on menu engineering, seasonal offerings, and premium enhancements (activations, pairings, specialty bars). • Team & Process • Mentor Catering Sales Managers/Coordinators; model best practices in CRM hygiene, proposals, and contracting. • Improve templates/SOPs, proposal decks, and sales collateral in partnership with Marketing.
