Arsicault Bakery – San Francisco Arsicault Bakery is a San Francisco institution known for world-class croissants, viennoiserie, and artisan breads. With 3 locations open and more to come, we are expanding our bread program and moving toward centralized production. We are seeking an experienced Bread Manager to eventually lead and scale our bread operations. Position Overview This is a senior, hands-on leadership role for an experienced bakery professional. The Bread Manager will own daily bread production, lead and develop the bread team, and play a key role in building a centralized commissary operation serving all locations. Key Responsibilities Lead daily production of baguettes and high-hydration, naturally leavened breads Maintain technical excellence in mixing, fermentation, shaping, and baking Manage production schedules, prep lists, and staffing Lead, train, and mentor the bread team Uphold quality, consistency, and food safety standards Scale recipes accurately using Excel Manage inventory, ordering, and waste reduction Work hands-on in production while overseeing workflow Collaborate with leadership on expanding and standardizing bread production across locations Required Experience & Qualifications Prior leadership experience required, such as Sous Chef, Lead Baker, Head Baker, or Production Manager (≈1 year or more) Experience in bakeries specializing in baguettes and high-hydration sourdough breads Strong command of artisan bread production in a commercial setting Ability to lead teams and manage production in a fast-paced environment Proficiency with Excel for recipe scaling Excellent organization, punctuality, and communication skills Ability to lift 50 lbs and work early morning shifts (start time 4:30 AM) Authorized to work in the U.S. and valid Food Handlers Certificate Professional References From Previous Bakeries Required Schedule & Compensation Full-time, early morning production schedule 5 consecutive work days, 2 consecutive days off Compensation Competitive, based on experience (salary) Benefits Health, dental, vision, and life insurance Paid Time Off (PTO) 401(k) Two breakfast pastries per day & unlimited coffee
